What I love about this dish is that is it super simple to make.

You can choose to make it also on the stove-top or in your instant pot / slow cooker too.

I typically make it on my stove-top.

HOW TO MAKE SIMPLE CHICKEN CURRY RECIPE

  • First you will want to start with mincing your onion, garlic and ginger in a blender.
  • To do that you want to add some chicken stock and fresh plain yogurt.
  • Once that is done, fry the cubed chicken breasts in a large pot along with ghee or butter till lightly browned and cooked.
  • Then add in the spices to the meat and sweat that down for a few minutes till fragrant.
  • Lastly, add in the blended ingredients and cover the pot.
  • Cooking over low-medium heat for 30 mintuyes.
  • Serve with fresh chopped cilantro alongside Naan bread of basmati rice.

Simple Chicken Curry Recipe

Ingredients

  • 3 large chicken breasts diced
  • 1 lime
  • 1/4 cup Greek yogurt
  • 2 cups of chicken stock
  • 3 tbsp curry powder (your favorite)
  • 1 tbsp teaspoon garam masala
  • 1 large onion, diced
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 1/2 tsp of scotch bonnet sauce or 1/2 tsp chili powder
  • 4 tbsp fresh cilantro to serve

Instructions

  1. First you will want to start with mincing your onion, garlic and ginger in a blender.
  2. To do that you want to add some chicken stock and fresh plain yogurt.
  3. Once that is done, dice the chicken and squeeze the juice of a fresh lime overtop. Allow that to marinatde in the fridge for 30 mins to tenderize the chicken.
  4. Rince the chicken under water and get ready to fry it in some ghee or butter.
  5. Add the cubed chicken breasts in a large pot along with ghee or butter till lightly browned and cooked.
  6. Then add in the spices to the meat and sweat that down for a few minutes till fragrant.
  7. Lastly, add in the blended ingredients and cover the pot.
  8. Cooking over low-medium heat for 30 mintuyes.
  9. Serve with fresh chopped cilantro alongside Naan bread of basmati rice.
