This Creamy Curried Cauliflower recipe is an easy vegetarian and is ready in less than 30 minutes that can serve a family of 3!

Curried Cauliflower

The Curried Cauliflower Recipe is simmered in a creamy yogurt, tomato, natural peanut butter sauce.

That is seasoned first with turmeric, gram masala, coriander powder, red chili powder, cumin powder, dried ginger, garlic and onion.

And is topped with dried fenugreek leaves and more yogurt to serve. Don’t it look tasty? Your going to have to give it a try to see for yourself of course 🙂

IS CURRIED CAUILFLOWER VEGAN

No because it has yogurt in it. However you can omit the yogurt and just use coconut cream if desired in replace of coconut milk which helps to thicken it up.

HOW TO MAKE CURRIED CAULIFLOWER

  • Start by washing your cauliflower off well and then chop it up into large or medium bite sized pieces and set aside.
  • Next in a large pot add in 1 tbsp of coconut oil and then all the seasonings. Simmer stirring on medium heat till fragrant then toss in the cauliflower.
  • Toss to coat the cauliflower well before adding in 1/2 cup of plain yogurt, water and the pureed tomatoes.
  • Simmer on low – medium heat covered for 25 minutes and serve topped with fresh yogurt and dried fenugreek leaves.

An Indian curry with the addition of peanut butter for extra flavor.

Ingredients

  • 1 small cauliflower
  • 1 cup of plain yogurt
  • 1/4 cup coconut milk
  • 1/2 cup of pureed tomatoes
  • 1 tbsp of peanut butter
  • 1 tsp turmeric
  • 1 tsp gram masala
  • 1 tsp mild curry powder
  • 1 tsp dried coriander
  • 1/2 tsp dried ginger
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp red chili powder
  • 1/2 tsp salt

Instructions

  1. Start by washing your cauliflower off well and then chop it up into large or medium bite sized pieces and set aside.
