Rajma Curry

Ingredients

  • 1 tbsp Cooking oil
  • 1 tbsp Butter
  • 2 cups Red Kidney Bean
  • 1 large Red Onion, chopped
  • 2 medium tomatoes, chopped
  • 1 tsp Fresh Ginger Root, minced
  • 2 cloves Garlic, minced
  • 2 tbsp fresh cilantro chopped
  • SPICES
  • 1 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tbsp Garam masala powder
  • OPTIONAL
  • 1 tbsp Dried fenugreek leaves
  • 1 tbsp Cilantro

Instructions

  1. Start by soaking the Red Kidney beans overnight or use canned the day of.
  2. In a large pot add the oil and butter along with the chopped red onion and sweat.
  3. Next add in the chopped tomatoes and then the ground garam masala powder.
  4. Fry for one minute before adding in the fresh ginger and garlic paste along and cook on low heat another 3 minutes till fragrant.
  5. Add in the Red Kidney Beans and remaining spices.
  6. Simmer for 20 minutes and serve with Jasmine rice!

Notes

Season with fresh fenugreek leaves and cilantro!
